First Interview – Erik Waterkotte

The first feature of “So What’s On Your Plate?” is published! It required this old dog to learn a lot of new tricks, but has been well worth it. And I really enjoyed interviewing Erik. His insight was as inspiring as his work. I also have to pass along many thanks to my editor spouse, M, who helped with transcription and proofing the interview.
